Where: Sancerre

Grape: Pinot Noir

Terroir: Chalky-clay

Age of vines: 20 years +

Yield: 50 hl/ha

Winery: Les Baronnes is obtained by draining (bleeding/saignée method) vats of Pinot Noir juice after 48 hours of cold maceration. The alcoholic fermentation is conducted in thermoregulated stainless steel tanks followed by 3-4 months maturation on the fine lees. Tasting note: Bouquet of ripe red fruits, raspberry and sweet cherry, lovely clean acidity.

Food: Asian cuisine, salads, fish soup

Where: South East France north of Toulon in the village of Lorgues

Grapes: Cinsault and Grenache (trad Provence varieties)

Vineyard: Limestone and clay soil. 40 hl/ha. Grapes are hand-picked and transferred to small boxes

Winery: Grapes are crushed to let the juice out and drained into stainless steel vats by gravity. Very short maceration followed by bleeding of vats. Decanting before alcoholic fermentation.

Style: Traditional style of wine-making. Pale grey-orange colour. Aromas of orange flowers, lilacs, wild rose, geraniums and jasmine, medium-bodied palate with spicy cherry fruit on the finish.

Food: John Dory, tapenade, grilled summer veg.

Other: Most of the wines in Provence and Southern Languedoc are organically produced. There is no need to spray against rot and yields are low because soils are so poor.

Where: Vin de Pays d'Oc from grapes sourced in Corbières and Minervois

Grapes: A blend of 30% Cinsault, 30% Grenache and 40% Syrah Cinsault (pronounced San So) produces pale delicate wines with floral aromas of jasmine
Grenache gives ripe strawberry fruit flavours with a hint of pepper Syrah lends structure and perfume to the blend

Vineyard: Handpicking of grape varieties

Winery: Bleeding of vat (saignée method) with a cold must settling and a low temperature fermentation

Style: Medium pink colour. Roses and geraniums on the nose, suggestion of soft red fruits (raspberries and strawberries), clean and refreshing finish

Food: As an aperitif. Mixed salads, grilled mullet, grilled vegetables, tapenade
