Where: In the Roussillon, near the Mediterranean fishing port of Collioure.

Grape: Muscat à petit grains.

Vineyard: Marnes and limestone terroir. Green harvest and lutte raisonnee.

Winery: Maceration pelliculaire, cold settling of the must, long temperature controlled fermentation. This is a fortified wine. The grapes are harvested late and the wine is fortified by a brandy (made from the marc of the crushed grape skins) being poured over it, a process known as mutage sur marc.

Style: Gloriously fresh aromas of orange-flower, crushed oozing grapes and crystallised fruits; the apparent sweetness is more than offset by a bitter tangy finish.

Food: Drunk in France as an aperitif, or with fruit tarts and pastries. Also exotic sorbets and Roquefort.

Other: Being fortified this wine will keep very well. Serve at 8C when drinking young.

Where: Bergerac. Monbazillac is an AOC for sweet wines only.

Grape: 90% Semillon, 10% Muscadelle
Soil: Argilo-Calcaire

Vineyard: Successive tries of botrytis and passerilleé (raisined on the vine) grapes

Winery: Fermentation in cuve for 20 days and regular batonnage on the fine lees

Style: White peach, confit fruits, honey, ample in the mouth with good equilibrium

Ageing: 2004 - 2006

Food: Crème brulée, foie gras

This sweet wine is made from 100% Chenin Blanc, hand harvested through the end of October by selection of grapes from old vines; noble-rotted and raisined grapes give this wine its natural sweetness. Fermentation is stopped at 12.5% alcohol by cold temperatures and filtration, leaving residual sugar. The fermentation is slow and long (controlled by temperature) to develop nuances of aromas and flavours. It is a sweet wine with balancing acidity for desserts or rich savoury dishes. - Robert Parker: 92+ "Mouth-watering ripe apricots, peaches, pears and notes of vanilla are found in the outstanding Coteaux du Layon-St Lambert's aromas and flavours. Beautifully structured, this fresh, lively and refined medium-to-full-bodied offering should age gracefully for two decades. Projected maturity: 1999 - 2020."

Grape: Chenin

Vineyard: Clay on schist. Integrated production programme. (Terra Vitis). Leaf-thinning, green harvesting, manual harvesting (3-5 tries)

Yields: 25hl

Winery: Soft and slow pressing of grapes. Slow fermentation in tank. Aged for 12 months. Bottled in autumn.

Ageing: 2004-2008

Food: Aperitif, foie gras, blue cheese, tarte tatin
