INGREDIENTS:

2 red sweet peppers
1 yellow pepper
2 medium red onions
1 aubergine
2 courgettes
Selection of fresh herbs of your preference
2 garlic cloves
15 cl olive oil
4 slices of stale white bread
1 bunch of rocket salad or similar peppery one
Salt and pepper

METHOD:
- cut all the vegetables in regular slices and
grill quickly on both side then evenly spread
onto a roasting tray with half the olive oil
and roast until tender, (10 to 15 min at 200c)
- in a liquidizer blend two third of the herbs
with the remaining olive oil and the garlic
- brush the bread with olive oil, salt and
pepper and bake until golden brown then chop
until you have coarse crumb (food processor
for a few seconds)
- mix all the cold roasted vegetables with
your green oil and rocket salad, salt and pepper
to test and then serve with the breadcrumb on
top and a few fresh herb leaves.
- Your favourite dry cheese in shavings can
top this recipe. Ex: Parmesan, emental, Gruyere
or tome
