Salmon slices marinated in saffron, lemon juice and pink peppercorns, complemented by a French bean and pistachio salad
INGREDIENTS:
For the salmon
250gr fresh salmon fillet
3 lemons
100ml olive oil
1 bunch chives
1spoon pink peppercorns
1 pinch saffron
Maldon salt and pepper
For the salad
250gr cooked French beans
1 tablespoon pistachio nuts
100ml whipping cream
1 tablespoon red wine vinegar
Salt, pepper |
METHOD:
| For the salad
Mix the cream with the vinegar, salt and pepper and pour onto the French beans and pistachios.
For the salmon
Cut the salmon filet in wafer thin slices and lay them flat on a plastic tray, sprinkle the salmon with lemon juice, olive oil, Maldon salt, chopped chives, saffron and pink peppercorns.
Leave to marinate for a few minutes and serve around the French bean salad. Decorate with lemon and dill. |
